Every summer, as temperatures in Khairpur climb past 45°C, our farm shifts into its most intense weeks of the year. Here’s what happens between the palm and the pack.
1. The climb
Date palms don’t make it easy — fruit hangs in heavy bunches up to fifteen metres off the ground. Skilled climbers work tree to tree through the grove, cutting whole bunches and lowering them carefully. With more than 60,000 palms, harvest is a choreography that runs for weeks.
2. Racing the monsoon
Khairpur’s harvest has a deadline: the monsoon. Rain on ripe dates means spoilage, so timing decides everything. Fruit destined for chuhara is laid out to cure in the dry heat; fruit for soft dates moves quickly into shade and processing.
3. Sorting and grading
Every batch is cleaned and then graded — by size, colour, moisture and skin condition. Machines help with size; trained eyes make the final call. This is where premium retail fruit separates from industrial grade destined for paste and powder.
4. Processing
Depending on the order: whole dates are packed as-is; pitting lines remove stones; dicing turns fruit into uniform pieces; grinding and pressing produce powder and paste. Hygiene protocols run through every step.
5. Packing and dispatch
Bulk cartons, vacuum packs, retail pouches or your own private label — sealed, labelled, palletised and documented for export, most commonly through Karachi port.
